Last night I attended a birthday party where one of the
guests made ice cream. Now I’ve made ice cream before and you may have too. It
usually involves nearly an hour of hand cranking, so when this guy said it
would take him ten minutes to make the ice cream, and it would be interesting
to watch, he got my attention. We sat raptly as he poured the heavy whipping
cream, the half and half, the sugar, and the strawberries his wife had picked into
a large bowl and then poured in – here’s where it gets interesting – some liquid
nitrogen. Fog poured over the side of the bowl as he stirred the ingredients
together, making it look as if he were preparing some magic potion. He repeated
the process with the liquid nitrogen three more times and then deemed the ice
cream ready for consumption. I have to say it was the tastiest ice cream I have
had in a very long time, maybe ever. So if you are able to get a hold of some
liquid nitrogen, you too can perform this fabulous party trick.

I could do that too, but you would not want virus with your ice cream!
You can get liquid nitrogen? We'll have to talk sometime.
